Shrimp Nicoise Salad

Ever since I started ordering my veggies from the farm, I get lotsss of lettuce every week. Lettuce means salads...almost everyday! I know salads get boring after a while that's why I got creative with this one!

Ingredients
(Serves one)

  • A bunch of lettuce of choice (about 50-75g, I used Green Crisp from Lufa Farms)
  • 2 sliced hard boiled eggs
  • 1/2 diced avocado
  • 8-12 shrimps deveined and peeled (I used size 31/40)
  • 1 1/2 tbsp Cajun seasoning
  • 2 tbsp unsalted butter
  • Salad dressing of choice (I used this one from my Burrito Bowl recipe)
  • Optional: sliced jalapeño pepper, micro-greens, basil

Method

  • In small bowl, marinate the shrimps with the cajun seasoning. 
  • Add butter to a skillet over medium heat, once melted, add the shrimps (you can add your jalapeño during this step).
  • Plate starting with the lettuce, diced avocado, hard boiled eggs, shrimps and sprinkle some micro-greens on top.
