Finger-licking-good Jerk Chicken

I came up with this jerk chicken recipe adapted from this one. It's so tasty and the longer you marinate the chicken, the better it will taste!

Ingredients
(Serves 2)

  • 1 medium onion roughly chopped
  • 3 green onion sprigs chopped
  • 3 garlic cloves
  • 1 seeded jalapeño pepper chopped
  • 1 1/2 tbsp all spice
  • 1/2 tbsp black pepper
  • 1 tsp dried chives
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/4 cup soy sauce
  • Juice of 1 lime
  • 1 tbsp canola oil
  • 2 skin-on whole chicken legs

Method

  • In a food processor, mix all the ingredients together except the chicken (obviously)
  • Rub the paste over the chicken legs and marinate overnight or up to 48hrs
  • You can grill it on a bbq for 30-35 minutes on medium heat or in the oven (380F) for 40-45 minutes.
