Finger-licking-good Jerk Chicken
I came up with this jerk chicken recipe adapted from this one. It's so tasty and the longer you marinate the chicken, the better it will taste!
Ingredients
(Serves 2)
- 1 medium onion roughly chopped
- 3 green onion sprigs chopped
- 3 garlic cloves
- 1 seeded jalapeño pepper chopped
- 1 1/2 tbsp all spice
- 1/2 tbsp black pepper
- 1 tsp dried chives
- 1 tsp dried thyme
- 1 tsp salt
- 1/4 cup soy sauce
- Juice of 1 lime
- 1 tbsp canola oil
- 2 skin-on whole chicken legs
Method
- In a food processor, mix all the ingredients together except the chicken (obviously)
- Rub the paste over the chicken legs and marinate overnight or up to 48hrs
- You can grill it on a bbq for 30-35 minutes on medium heat or in the oven (380F) for 40-45 minutes.
