Peanut and Shrimp Rice Noodles

By now you’ve probably noticed that I love me some shrimps, I probably make some twice a week, if not more!

This recipe is so easy and doesn’t require that many ingredients, most of which you probably already have in your fridge/pantry.

Ingredients
(Serves 2)

  • 1/2 package of flat rice noodles (approx 150g)

  • 1/2 cup of chopped and fried shiitake mushrooms

  • 10-12 cooked shrimps

  • 1/3 cup peanut butter

  • 3  minced garlic cloves

  • 3 tbsp soy sauce

  • 3 tbsp water

  • 1 tbsp chili garlic sauce

  • 1 tbsp maple syrup

  • 1/2 tbsp sesame oil

  • 2 sprigs green onions chopped

  • 1/4 cup chopped cilantro

  • 1/4 cup chopped peanuts

Method

  1. Cook noodles according to package, once cooked drain the extra liquid and set aside

  2. In a small bowl, combine peanut butter, soy sauce,  minced garlic, water, chili garlic sauce, maple syrup and sesame oil and whisk until smooth (texture should be thick but still drip from the fork) if too thick, add another 1-2 tbsp of water (it depends on the peanut butter used)

  3. Add sauce, shrimps and shiitake mushrooms to noodles and mix thoroughly until well combined over medium heat for 3 minutes

  4. Serve in bowls and sprinkle green onions, cilantro and chopped peanuts.
