EASY Cajun Salmon & Creamed Corn
This is definitely a comfort meal that’s also super healthy and is ready in about 15 minutes! I find that salmon pairs so well with this creamed corn.
Ingredients
(Serves 2)
For the salmon:
2 salmon portions (one fillet cut in half)
2 tbsp Cajun seasoning (I make my own using this recipe)
1 tbsp brown sugar
For the creamed corn:
2 cup of corn kernels (no need to thaw if using frozen)
1 small yellow onion chopped
2 cloves of garlic minced
2-3 slices of deli ham minced (optional)
1 cup of milk of choice (I’ve been using Unsweetened Oat Milk)
2 tbsp of flour
Salt & pepper to taste
Method
Preheat oven to 400(F)
Mix the cajun seasoning and brown sugar in a small plate and coat the top layer of your salmon portions.
In an-oven safe pan lined with parchment paper, bake the salmon for 15 minutes
In a medium skillet over medium heat, add olive oil and fry chopped onions, garlic and ham until onion is translucent and ham is browning (about 5 minutes);
Add flour to skillet and mix-in until there are no more “lumps”
Add corn and fry for an additional 2 minutes
Add milk and stir thoroughly, you’ll notice that it will thicken up (add more liquid little by little - if necessary, to get consistency of picture above).
Reduce heat to simmer and let it cook for about 5 minutes.
Salmon and corn should be ready to plate! Add any sides you like (rice, potatoes, salad, asparagus) and top with parsley!
