Green* Papaya Salad

I haven’t posted a recipe in a while and I apologize, I’ve been having issues with my laptop but all is back to normal.

Here’s a little salad recipe I made a few weeks back that’s both healthy and yummy! You’ll need green papaya* (not regular sweet and orange papaya, it has to be the green tart kind). If you can’t find it at your regular grocery store, try an Asian Supermarket.

Ingredients
(3 servings)

For the salad

  • 1 whole medium green papaya

  • 2 large carrots

  • 2 Thai chilies

  • 1/2 cup of chopped green onion

  • Fresh cilantro

  • Chopped peanuts

  • Optional: Shrimps


For the dressing (Nuoc Cham)

  • 6 tbsp fresh lime juice

  • 3 tablespoons Asian fish sauce

  • 1/4 cup sugar

  • 1/2 cup warm water

  • 2 garlic cloves, finely chopped

Method

  1. Peel papaya and cut in half, make sure to remove the seeds

  2. Peel carrots and julienne both the papaya and the carrots and add to a medium bowl

  3. Seed and thinly slice the chillies (be careful, do not touch the seeds with your fingers, they are very hot and can burn you) and add to bowl

  4. Mix all of the dressing ingredients in a separate bowl or a mason jar (that way you can store the sauce if there’s too much)

  5. Pour 3/4 of the dressing over the salad (or to taste), garnish with chopped peanuts, fresh cilantro and chopped green onions!
