Easy but delicious Moules Marinières

I received a free 2lbs of mussels last week with my groceries and My Oh My. I decided to somewhat follow Serious Eats' "The Best Moules Marinières" recipe. I didn't have all the ingredients so I made a few substitutions and it was so good. I served them with garlic bread for dipping.

Ingredients
(Serves 2)

  • 2lbs of mussels
  • 1 medium chopped onion (I like it extra onion-ey - if that's a word)
  • 4 cloves of garlic
  • 1 cup of white wine
  • 1/4 cup of heavy cream (35%)
  • 2 bay leaves
  • 2 tbsp of unsalted butter
  • salt & pepper to taste
  • a handful of fresh thyme

Method

  1. In a skillet over medium-heat, melt the butter and add chopped onion and garlic
  2. Once the onion is translucent (about 5 minutes) add bay leaves, salt, pepper, white wine and bring to a boil.
  3. Once the wine, onion garlic mixture is boiling reduce to medium heat and whisk-in cream and stir-in the mussels right after. Cover until all the mussels are opened.
  4. Once all opened, turn off the heat and it's time to plate! Separate the mussels and their sauce in two bowls,  and sprinkle with fresh thyme and enjoyyyyy!

Important Note: For the garlic bread, you can find some in the frozen isle at your nearest grocery store, but for mine I used leftover brioche burger buns, pizza garlic dipping sauce to which I added dry parsley (ingenious, I know) and toasted them for about 2-3 minutes or until golden brown!
