Easy but delicious Moules Marinières
*Not the best picture but I wanted to show the bread, also make sure you have an extra bowl on the side to throw away empty shells.
I received a free 2lbs of mussels last week with my groceries and My Oh My. I decided to somewhat follow Serious Eats' "The Best Moules Marinières" recipe. I didn't have all the ingredients so I made a few substitutions and it was so good. I served them with garlic bread for dipping.
Ingredients
(Serves 2)
- 2lbs of mussels
- 1 medium chopped onion (I like it extra onion-ey - if that's a word)
- 4 cloves of garlic
- 1 cup of white wine
- 1/4 cup of heavy cream (35%)
- 2 bay leaves
- 2 tbsp of unsalted butter
- salt & pepper to taste
- a handful of fresh thyme
Method
- In a skillet over medium-heat, melt the butter and add chopped onion and garlic
- Once the onion is translucent (about 5 minutes) add bay leaves, salt, pepper, white wine and bring to a boil.
- Once the wine, onion garlic mixture is boiling reduce to medium heat and whisk-in cream and stir-in the mussels right after. Cover until all the mussels are opened.
- Once all opened, turn off the heat and it's time to plate! Separate the mussels and their sauce in two bowls, and sprinkle with fresh thyme and enjoyyyyy!
Important Note: For the garlic bread, you can find some in the frozen isle at your nearest grocery store, but for mine I used leftover brioche burger buns, pizza garlic dipping sauce to which I added dry parsley (ingenious, I know) and toasted them for about 2-3 minutes or until golden brown!
